Shredded potato is one of the most beloved home-style dishes in China - simple, fast, and surprisingly addictive. This version keeps things vegan and adds toasted cumin seeds, which bring a warm, earthy fragrance that pairs beautifully with the potato's crisp texture.
Materials
- Potato: 1 larger or 2 medium-size potatoes
- Optional colorful vegetables: a small amount of sweet pepper, carrot, or spring onion; add spicy chilies if you like heat
Ingredients
- Plant oil: 10-20 ml
- Salt: 3-6 g
- Cumin seeds: 3 g (a pinch)
- Optional vinegar: 2-3 ml
Prep the potato
- Cut the potato into thread-like pieces, or use a grater with larger holes.
- Soak the shreds in water, then rinse again after cutting. Washing off the starch keeps the potato from turning dark and helps it stay crisp.
- Cut any other vegetables into threads or small sections.

Stir-fry
- Turn the heat to high (around 6 on most stoves).
- Add the cumin seeds and toast them until little bubbles rise around them and you can smell their fragrance.
- Add the potato threads and stir everything until well mixed.
- Scatter half the salt over the top, turn the potato, and scatter the rest.
- If you like, add a few drops of vinegar and mix it in well.
- When the potato threads take on a glossy, slightly translucent look, turn off the heat. That is the sign they are perfectly cooked.
Serve hot alongside rice or your favorite protein. It is crisp, warming, and proof that a few humble ingredients can make something truly memorable.
