Hand-torn chicken is one of those dishes that looks effortless but delivers restaurant-level flavor. Chicken is gently steamed until just cooked, then torn by hand into bite-size shreds and dressed with a warm, spice-fragrant sauce. Because the chicken is steamed rather than boiled or fried, it stays unusually juicy, and the hand-tearing gives every piece a soft, satisfying texture.
Steam the chicken
Start with bone-in chicken for the most flavor. The sauce and the natural juices do the rest.
- Use 2 pulled chicken legs (or 4-5 chicken drumsticks). Cut a couple of shallow slashes toward the bone on each side so the heat reaches the meat evenly.
- Slice a few pieces of ginger and tuck them into the cuts.
- Place the chicken in a deeper plate or a wide, low bowl, and steam for about 20 minutes, until cooked through.

Prepare the sauce
This is where the dish gets its personality - a warm, aromatic dressing built on Sichuan pepper and five-spice.
- Slice 2 sweet peppers and a quarter of an onion into thin, thread-like pieces.
- Chop a small bunch of cilantro into half-to-one-inch lengths.
- Chop 1 spring onion, 3 garlic cloves, and some preserved black beans into flakes, and place them in a heatproof bowl.
- Heat about 1/3 cup of cooking oil until hot, then pour it over the bowl. The aromatics will sizzle and bloom.
- Add the following to the bowl, in order: 1/2 tsp Sichuan pepper powder, 1/4 tsp five-spice powder, 1/8 tsp sugar (optional), 1/2 tsp vinegar, 1 tsp soy sauce, 1 tsp dark soy sauce (or more soy sauce if unavailable), and 1/4 tsp sesame oil (skip if allergic).
- Stir everything together and let the flavors blend for a few seconds.
Make the dish
- Take out the steamed chicken and let it cool just until you can handle it.
- Tear the meat into thread-like shreds into a serving container.
- Scoop about 1/4 cup of the chicken juices from the steaming plate into the container.
- Pour the sauce over the meat and vegetables, and toss everything together until evenly dressed.
Serve warm or at room temperature. The combination of tender chicken, crisp pepper strips, and that warm, aromatic sauce is comfort food at its most effortless.
