Few dishes bridge generations like tomato and ground pork sauce. The tomatoes break down into a bright, saucy base; the ground pork adds richness; and ginger, garlic, and onion do the aromatic heavy lifting. It comes together in minutes, works over rice or noodles, and is endlessly forgiving for home cooks.

Materials

  • Tomatoes: 3 medium-size
  • Ground pork: 50-150 g, as you like

Ingredients

  • Ginger: 5-10 g
  • Garlic: 1-2 cloves
  • Onion: half
  • Salt: 6 g
  • Plant oil: 20-50 ml
  • Soy sauce: 30 ml
  • Mixed spice flakes: 5 g

Tomato, ginger, garlic & onion

  1. Chop the tomatoes into small pieces.
  2. Chop the ginger, garlic, and onion into very fine flakes.

Stir-fry

Tomato and ground pork sauce in the wok
  1. Pour the oil into a wok and heat it over a low flame (level 2 or 3).
  2. Add the ginger, garlic, and onion flakes and stir-fry until fragrant.
  3. Turn the heat up (level 5-6) and add the ground pork, stirring until it changes color to white.
  4. Add the tomato pieces and stir until everything is well mixed.
  5. Season with salt, soy sauce, and the spice flakes, then lower the heat to medium (level 4).
  6. Cook for about 2-3 minutes, until the tomatoes look like they are melting into the sauce.
  7. Done - take it out and enjoy.

Serve over steamed rice or noodles, and spoon the extra sauce generously over the top. It is the kind of dinner that disappears fast and makes the whole kitchen smell wonderful.
